Today I was running a bit late to church, so I knew that whatever I prepared for brunch had to be super quick. Anyway, this was super easy and so delicious!
Here’s the breakdown of what I made:
I added some olive oil into a pan and a handful of baby spinach leaves. I stirred the spinach with the oil for a few seconds until it was cooked through and added two eggs. Once the eggs were almost ready (I like mine runny), I added some salt and Swiss cheese on top of the spinach and let it melt.
To accompany my eggs, I tossed some lettuce in a bowl with kalamata olives, feta cheese, olive oil, and salt.
I kid you not, this took me about ten minutes to cook. It was super easy and I used ingredients I usually always have in my fridge.
